cake pops - a recipe


Cake pops are a little something I have been wanting to try for some time now.  And I'm really pleased with how they turned out and how easy they were to make. 
I ended up constructing them with my Year 9/10 Food Studies class today, so these are what we produced together.

(Oh, by the way have I ever told you that I'm a Home Economics teacher?? 
Well I am!! 
But that is by the by.)

First we made a couple of basic butter cakes, several days before we needed to use them.  The cakes were cooled and stored in the fridge.  Today we crumbled the cakes and mixed the crumbs with enough apricot jam to hold the mix together.

Shape 2tsp measures of cake mix into tight balls and chill on trays in freezer. 
Melt chocolate in double boiler. 
Dip lollipop sticks in the melted choc and stick in cake balls. 
Chill in freezer again.

Dip cake balls in choc and drip excess off.  Before the choc sets, dip in hundreds and thousands or sprinkles or whatever your imagination can come up with. 
Rest cake pops in small cups to set.

We all had great fun making these. 

I can see myself making cake pops for the next birthday party in our family!
